Chef Carlos Fernandez started his culinary career in the 80’s and has worked as Executive Chef in various locations across the U.S. After receiving his degree in Culinary Arts and Hotel Management from Claremont Mesa Community College in San Diego, California he moved to Las Vegas to start his culinary career. Chef Fernandez has worked as Assistant Executive Chef at both the Aladdin Hotel and Casino and Bally’s Paris Hotel. He served as Executive Chef at the Savoia Restaurant and Banquet Chef at the AAA 4-Diamond Alexis Park Resort. Building on that success Chef Fernandez was hired as Executive Chef at Marriott’s Lincolnshire Resort and Theater in Lincolnshire, Illinois and then moved east to serve as Executive Chef at the Millennium Hotel and Resort in downtown Cincinnati, Ohio. We are very glad that Chef Fernandez has decided to come back to Las Vegas and share his expertise with our students.
